Ingredients

    Turkey carcass, or 3 turkey wings
    9 stalks celery, 1/2-inch slices
    1 lb. carrots, 1-inch slices
    2 med. onions, diced
    3 parsnips, 1/2-inch rounds
    4 cloves garlic, chopped
    Handful chopped dill
    1 cup chopped parsley
    1 tbs. salt
    2 tsp. black pepper
    10 quarts (2.5 gal) water
    5 to 6 cups barley, uncooked

Directions

Place turkey, celery, carrots, onions, parsnips, garlic, dill, parsley, salt, pepper and water in 16-quart pot over medium heat. Bring to boil, reduce heat and simmer for 3 hours. Skim foam as soup cooks.

Cool and shred meat off bones. Return meat to soup, add barley. Simmer for 40 minutes.

NOTE: Barley may be cooked separately.
