Introduction
This actually goes with boneless, skinless chicken breast-browned in 1tbsp of extra virgin olive oil, but this is just the sauce.I didn't add the nutrition for the chicken since all breast pieces are different in weight. You could cut the chicken into 1 inch cubes and brown it, then have a more balanced split for the meal. Ingredients

boneless, skinless chicken breast
2 tbsp extra virgin olive oil
1 whole green bell pepper (sliced thin)
1 med spanish onion, diced
1 tsp garlic, minced ( I used the ready made stuff)
1 can of diced tomatoes (use whatever flavour you like)
1 tsp dried oregano flakes
1/4 tsp salt
Directions
*heat oil in skillet. brown chicken both sides and set aside
*add pepper, onion and garlic into skillet-sautee until veg are soft
*add diced tomatoes, oregano, salt and bay leaf, mix
*add chicken back into sauce, cover and let it simmer 30-40 minutes
serves 4
