Introduction

This actually goes with boneless, skinless chicken breast-browned in 1tbsp of extra virgin olive oil, but this is just the sauce.
I didn't add the nutrition for the chicken since all breast pieces are different in weight. You could cut the chicken into 1 inch cubes and brown it, then have a more balanced split for the meal.

Ingredients

    boneless, skinless chicken breast
    2 tbsp extra virgin olive oil
    1 whole green bell pepper (sliced thin)
    1 med spanish onion, diced
    1 tsp garlic, minced ( I used the ready made stuff)
    1 can of diced tomatoes (use whatever flavour you like)
    1 tsp dried oregano flakes
    1/4 tsp salt

Directions

*heat oil in skillet. brown chicken both sides and set aside
*add pepper, onion and garlic into skillet-sautee until veg are soft
*add diced tomatoes, oregano, salt and bay leaf, mix
*add chicken back into sauce, cover and let it simmer 30-40 minutes
