    2 chicken breast, skinless boneless
    1 cup chopped carrots
    1 cup raw onions
    2 raw potatoes, peeled & diced
    .50 cup frozen corn
    .25 cup bell peppers, chopped
    1 Tablespoon Black Olives
    8 cups of tap water
    .75 cup cornstarch
    1 cup shredded chedder cheese
    1 pkg Doritos light nacho cheesier chips


Combine the first seven ingredients with seven cups of water in a Dutch oven or soup pot. Heat at medium until boiling, approximately 30 minutes. Turn heat down to low and cook until chicken is white.

Remove chicken from soup, cool 10 minutes and shred with fork into 1-2 inch pieces. Return cooked chicken to soup & cook until carrots & potatoes are soft.

Mix 1 cup water thoroughly with .75 cup of corn starch & add to soup mixture, stirring so that there are no lumps. Heat until soup is opaque, stirring every three minutes for the next ten minutes.

To Serve: Put 2-3 Doritos in the bottom of the bowl & add a Tablespoon of shredded cheese. To that add the soup.
