Ingredients

3/4 cup whole almonds
3 medium eggs
1/4 teaspoon almond extract
1 teaspoon vanilla extract
7/8 cup sugar
2 cups all purpose flour
1 teaspoon baking soda
1 dash salt
Directions
Toast nuts at 350 for 8 to 10 minutes, or until golden.
Beat eggs, vanilla and almond extract with a wisk.
Combine flour , sugar, baking powder, and salt in a mixing bowl. Add egg mixture and mix about 1 minute. Cut nuts into halves or thirds and mix in. Divide dough in half. On a greased and floured baking sheet, shape dough into two logs about 1/2 inch thick, 1 1/2 inches wide and 12 inches long. Space the logs at least 2 inches apart. Bake in a preheated oven at 300 for 50 minutes or until golden brown. Transfer to a cooling rack for 10 minutes. On a cutting board with a serrated knife slice diagonally at a 45 degree angle about 1/2 inch thick. Lay slices flat on a baking sheet in a 275 degree oen for 20 t0 25 minutes turning over after 12 minutes to dry on the other side.
