    8 Whole Wheat Tortillas
    1 container reduced-fat Ricotta Cheese
    2 tsp taco seasoning
    2 cups shredded 4 mexican cheese
    2 cups cooked Louis Rich Chicken cubed
    1(10 ounce) can mild enchilada sauce


Wrap tortillas in damp paper towel & microwave on hight for 60 seconds.
Mix ricotta cheese, tacoseasoning, 1 cup of 4 mexican cheese and cubed chicken together in small mixing bowl.
Spray 8"x8" dish
Spread filling evenly on tortillas, roll tightly & place seam sid down in baking dish.
Pour sauce over tortillas
Microwave 10 to 12 minutes until sauce is buddling
Cover with remaining cup of 4 mexican cheese and microwave for 1 to 2 minutes more
Serves 4 to 8

  • The only problem with this recipe is that the ingredient list is not the same as the list used to calculate calories. I put this into recipe calculator and got a number that makes more sense. NOTE to all dieters: if a number looks too good to be true, usually it's not. - 3/20/09
