Introduction
Made specifically to put on tofu custard pie, but would also be good on pancakes, crepes or cheesecake. I've made this with raspberries and it was very good. Ingredients

1 C blueberries (raspberries and strawberries good too)
1/2 C water
1/3 C splenda (or to taste)
lemon juice (half a lemon)
1 teaspoon guar gum (Bob's Red Mill)
Directions
Add fruit, water, splenda and lemon juice in a small sauce pan. Cook over medium heat until bubbly. Reduce heat to low and sprinkle guar gum into sauce while stirring constantly. Guar gum will thicken almost immediately. Stir for a few seconds and remove from heat. If you see that it's getting to thick for your needs quickly add a small amount of water and continue to stir until smooth. If you don't have guar gum you can use cornstarch or arrowroot. Serve hot over pancakes or chill and top cheesecake.
