    4 C all purpose flower
    1 Tbsp baking soda
    1.5 tsp ground cinnamon
    1/2 tsp nutmeg
    1/4 tsp salt
    5 eggs
    3/4 C Canola oil
    3/4 C unsweetened apple sauce
    2 C sugar
    1 Tbsp vanilla extract
    2 C. shredded unpeeled zucchini
    1 C Shredded unpeeled apples
    1.5 C chopped walnuts


In a large bowl, combine flour, baking soda, cinnamon, nutmeg and salt. In another bowl, beat eggs. Add oil, apple sauce, sugars, and vanilla. Pour over dry ingredients; mix well. Stir in Zucchini, apples and walnuts (batter will be stiff). Spoon into three greased loaf pans. Bake at 350 degrees for 50-55minutes or untill done. Cool in pans for 10 minutes before removing to a wire rack to cool completely.

Yield: 3 loaves; 10 slices each loaf
