Introduction
A recipe from Minute Instant whole Grain rice box. The original rice has Parmesan cheese but I accidentally left it out when I made this recipe. Ingredients

1 T canola oil
20 oz skinless boneless chicken thighs cut into bite size pieces
6 cups baby spinach leaves washed and dried
2 cups minute brown rice uncooked
1.5 cups cherry tomatoes cut in half
1 can chicken broth
Directions
Heat oil in large deep skillet ( my husband used a wok) on medium heat. Add chicken; cook 10 minutes or until chicken is cooked through, stirring frequently.
Add spinach, rice tomatoes and broth; mix well. Bring to boil. Reduce heat to low; cover. Simmer 10 min.
Let stand 5 minutes.
Makes 6 one cup servings.
