Recipe orginaly from Heart Healthy Living - Fall 2008, page 91.
Original recipe called for oil instead of apple sauce; dates instead of sunflower seeds and I have added a lot more spices.

Ingredients

    1 cup whole wheat flour
    1 cup rolled oats
    1 tsp baking soda
    5 tsp pumpkin pie spice
    1/2 tsp salt
    1/2 cup pumpkin seeds - roasted
    1/2 cup sunflower seeds - roasted
    1 cup canned pumpkin
    2 eggs
    1/2 cups (2-4 ounce containers) unsweetened applesauce
    2 tsp vanilla
    1/2 cup brown sugar

Directions

1. Preheat oven to 350F. Line a cookie sheet with tin foil and spray with nonstick spray.
2. In a medium bowl, combine flour, oats, baking soda, cinnamon, pumpkin pie spice, and salt.
3. Mix together and add pumpkin and sunflower seeds so they are coated with the flour mixture.
4. In a small bowl, whisk together pumpkin, egg, applesauce, vanilla and sugar.
5. Stir pumpkin mixture into the flour mixture until combined.
6. Spread the mixture evenly in prepared pan.
7. Bake for 20 minutes or until top is firm and a toothpick inserted into the center comes out clean.
8. Cool in a pan, removed from pan, remove tin foil and cut into approx, 36 pieces.
