Ingredients

    spaghetti squash
    marinara sauce (homemade or your favorite canned)
    mushrooms
    red pepper
    part-skim mozzarella cheese

Directions

Preheat oven to 400F.

Halve squash lengthwise and scoop out seeds. Place squash, cut sides down, in a large baking dish and prick skin all over with a fork. Bake until tender, 45 - 60 minutes.

While squash is baking, marinate mushrooms and peppers with small amount of butter or olive oil and garlic.
Make your own marinara sauce or heat up your favorite brand.

I like to mix the mushrooms and peppers with the sauce.

When the squash is cooled, use a fork to remove the "meat" - it should be stringy, like spaghetti. Top squash with mozzarella cheese, sauce, mushrooms and peppers.
