Number of Servings: 4

Ingredients

    1 can Libby's corned beef
1/4 cup onions, chopped (any variety)
3 medium potatoes, cut into chunks
    1/2 cup skim milk
    2 tbsp butter
    salt & pepper to taste

Directions

Cut potatoes into chunks and put in a medium sized saucepot. Cover with cold water, lid, and bring to a boil. Once boiling add salt if desired. Cook until fork tender, then drain. Once drained, add butter, milk, and salt & pepper to taste. Mash to desired consistency.

While the potatoes are cooking, add 1 can of corned beef to a skillet over medium heat. Once the meat starts to heat up, add the onions and cook for 5-10 minutes, until the onions become softer and meat looks like it's been cooked.

Combine the meat and potatoes and mix together. Serve hot. Steamed vegetables or a salad would be a nice side dish with this meal.

I chop up leftover corned beef, and use my cabbage, onion, carrots and celery to make the hash w/the potatoes. It's less sodium vs. using the canned corned beef, and fresher ingredients. - 2/11/20

I used group beef instead of corned beef and the dish was really delicious. I replaced the milk and butter with herb-infused EVOO and tossed in strips of different color sweet peppers. What a treat! Thanks. - 11/19/18

My family loves corned beef & potatoes! We usually skip the butter & milk, fry potatoes in a little olive oil, put in corned beef and add some garlic salt. I don't make it often because of the high sodium and I tend to eat way too much of it :) - 7/30/11
