    3 C Brown Rice Flour
    1 C Soy Flour
    1 T pumpkin pie spice
    2 tsp baking powder
    1 tsp baking soda
    3/4 tsp salt
    1 can (15 oz) 100% pure pumpkin
    1 C Splenda brown sugar blend
    1/2 C unsweetened applesauce
    1/2 C 100% apple juice - no sugar added
    1 C Egg Beaters
    1/4 C Enova oil
    2 tsp vanilla extract
    1 C chopped pecans, divided


Preheat oven to 350 degrees. Grease two 9 x 5 loaf pans.

Sift flours, pumpkin pie spice, baking powder, baking soda and salt into a medium bowl. Combine pumpkin, sugar, applesauce, juice, Egg Beaters, oil and vanilla extract in a large bowl; stir well. Stir in flour mixture and 3/4 cup nuts just until moistened. Spoon into prepared loaf pans. Sprinkle remaining 1/4 cup nuts over top of loaves.

Bake for 60 to 70 minutes or until wooden pick insertied in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.
