    1.25 lbs. extra lean ground turkey
    2 14.5 oz. cans of diced tomato
    1 large onion, diced
    1/2 cup diced green peppers
    1 Tbs minced garlic
    1 tsp oregano
    1 tsp basil
    1 15.8 oz. can blackeye peas
    1 13.5 oz. can spinach
    1/2 cup water (if needed)


in large skillet, brown ground turkey. Add onions and green peppers, and garlic and cook another minute or so before adding tomatoes, oregano, and basil. Simmer for 10 to 15 minutes then add blackeye peas and spinach. Cook for another 5 minutes. (If you desire more liquid add 1/2 cup water and 1/2 tsp of garlic powder.)
Serve over linguine or other pasta (not included in nutrition counts).
Makes 6 1-cup servings.
