Introduction

Red skin potatos roasted to perfection with onion and rosemary. Red skin potatos roasted to perfection with onion and rosemary.
Number of Servings: 4

Ingredients

    3 cups red skin potatoes, diced
    1 medium sweet onion, sliced
    2 tbsp. olive oil
    1 tbsp. dried rosemary
    salt and pepper to taste

Directions

1) Pre-heat oven to 400 degrees.
2) Wash and cut potatoes into bite sized pieces.
3) Slice onion
4) Mix potatoes, onion, olive oil and seasonings in a mixing bowl and pour onto a cookie sheet.
5) Bake in oven at 400 degrees for 20 minutes, turn once.

Divide into 4 servings.
