Introduction

Super-moist, healthy, not too sweet, makes a lot! Freezes well and good for breakfast. Super-moist, healthy, not too sweet, makes a lot! Freezes well and good for breakfast.
Number of Servings: 16

Ingredients

    2 cups whole wheat flour
    1 cup white flour
    2 tsp baking soda
    1 tbsp cinnamon
    1 can pumpkin (small can)
    2 cups light syrup
    .5 cup canola oil (I like to use a little less)
    .5 cup applesauce (I use a little more)
    2 tsp flax
    3/4 cup water

Directions

Mix dry ingredients together.
In another bowl, combine wet ingredients except for flax and water.
Combine the flax and water in a small bowl, add to wet ingredients.
Combine wet and dry ingredients, stir just to mix.

Bake at 350 for 60 minutes if using 2 bread loaf pans and 85 minutes if using a bundt pan. Cut into 16 slices (16 bundt cake slices or 8 slices per bread pan -- that's a nice thick slice!)
