    2 Chicken Breasts, cubed
    1 TB Oil
    4 tsp Garlic, minced
    4 tsp Ginger Root, minced
    2 tsp Green Curry Paste
    1 tsp Ground Cumin Seed
    4 c Water
    1 14oz can of Coconut Milk ( Lite preferrable)
    2 c Carrots, Shredded
    2 c Broccoli, Chopped
    1 med Red Sweet Pepper, Chopped
    2 3 oz pkgs Chicken Flavored Ramen
    2 c Snow Peas
    2 TB Lite Soy Sauce
    4 tsp Lime Juice
    1/2 c Fresh Basil, chopped
    1/4 c Fresh Cilantro, Chopped


In a wok on med heat , cook chicken in 2 tsp oil until lightly brown. Remove, set aside. Add remaining oil and garlic, ginger, curry and cumin; cook 30 seconds. Add water, coconut milk, carrots, broccoli, peppers and chicken; cook 2 minutes. Add noodles (reserve seasoning packets) cook 3 minutes. Add seasoning packets, soy sauce, lime juice, basil and cilantro and serve in bowls.
