    1.5 cups cottage cheese
    9 large eggs
    1 large bell pepper
    .25 cup chopped onion
    .25 cup shredded sharp cheddar


mix all ingredients except for shredded cheese, with salt and pepper to taste and blend with a hand blender or regular blender until whipped. Pour into a greased muffin pan and
sprinkle shredded cheese on top. Bake at 375 for about 20 minutes or until eggs are set.
Reheat in the microwave for breakfast on the go.
