Ingredients

    1 Pound Beef Stew Meat
    3 Large Carrots, chopped
    3 Medium Onions, quartered
    1/2 Teaspoon Thyme
    1 Teaspoon Ginger
    4 Cups 99% Fat Free Beef Broth
    2/3 Cup Flour
    2 Tablespoons 1% Milk
    1/2 Teaspoon ground pepper
    1/2 Tablespoon dried Parsley
    2 large eggs

Directions

Brown beef in a large pot, add carrots, onions, thyme, ginger and broth. Bring to boil, reduce heat and simmer for 1-1/2 hours. Meanwhile, mix flour, milk, eggs, pepper and parsley. Bring stew back up to a boil, drop in dumplings. Cover for 10-15 minutes or until dumplings are done. Makes 6 servings.
