Introduction

Ingredients

    1 lb. extra lean ground beef
    1 qt. beef broth
    1 egg
    1 tsp salt
    1/4 ground pepper
    10 green onions, chopped
    1 c celery, chopped
    1 c carrots, chopped
    1/2 of small head of cabbage, shredded
    2 tomatoes, chopped
    1/2 c rice
    1 bay leaf
    1 tsp basil
    2 TB soy sauce
    2 TB parsley

Directions

In large pot heat broth to simmer. Meanwhile mix beef, egg, salt and pepper; shape in 1 1/2 inch balls. Drop into broth. Add onions, celery, carrots, cabbage, tomatoes, rice, bay leaf and basil. Cover and simmer for 35 min. stirring occasionally. Discard bay leaf. Stir in soy sauce, top each serving with parsley. Make about 6 servings.
