Introduction

A nice soup for late-summer veggies... A nice soup for late-summer veggies...
Number of Servings: 5

Ingredients

    4 cups low sodium chicken broth or chicken stock
    1/2 onion, sliced
    1 clove garlic
    1 small bell pepper
    1 zucchini, sliced
    1 can no-salt added white beans
    10 oz. fresh spinach
    1.5 cups chopped mushrooms
    2 eggs
    1/3 cup grated parmesan cheese
    Salt, pepper, thyme and sage to taste.

Directions

Saute aromatics, then add vegetables and saute a few minutes more. Add broth. Bring to a boil, whisk in beaten eggs, and then add the spinach and beans. Simmer 15 minutes.
