    2 T canola oil
    2 medium sized onions, peeled and sliced
    4 oz. egg beaters
    1 c shredded swiss cheese
    1 1/2c. low fat half and half
    1/4 tsp. nutmeg
    1 tsp salt
    1/4 tsp black pepper
    1/2 c finr dry bread crumbs


1. Preheat oven to 350. Saute onions in 1-1/2T. canola oil. Cook, covered until very soft, about 10 min.
2. Meanwhile, in a mixing bowl, combine the eggs,cheese,half and half,nutmeg,salt, and pepper.
3. When onions are cooked, spread them out in a cooking sprayed pie plate. Cover with the egg mixture. Combine the bread crumbs with 1/2T canola oil, and sprinkle onto egg mixture. Bake, uncovered, for 25 min, or until puffed and set.
Makes 4 servings.
