    2/3 cup margarine
    2/3 cup brown sugar
    2 egg whites
    2 tsp vanilla extract
    1 cup all purpose flour
    1/2 cup whole wheat flour
    1/2 cup soy flour
    1 tsp baking powder
    1/2 cup apricot (or any flavor) no sugar added preserves


Preheat over to 350 degrees.

Cream together margarine and sugar. Mix in egg whites and vanilla.

Sift flours and baking powder together and mix into the batter until a soft dough forms.

Divide dough into 4 pieces and roll each piece into a rope about 12 inches long. Place each rope on a non-stick or cookie sheet and partially flatten. Using the handle end of a large cooking spoon, make a "ditch" down each roll. Fill the ditches with preserves.

Bake for about 15 minutes. Let cool slightly, but cut each roll into cookies while they are still soft.

Makes 40 cookies.

Note: These cookies are not sugary sweet. If you prefer them a bit sweeter, dust with confectioner's sugar.
