    6 Large Scallops
    1/2t. Olive Oil (Light)
    Fresh Cracked Black Pepper
    Mache Greens, or other leafy salad greens
    2oz. Walnut Halves
    1/2 Shallot, chopped (approx 2T)
    1T. Champagne Vinegar
    1/4C. Freshly Squeezed Juice from Blood or Valencia Orange
    1 Tangerine, sections for garnish


Lightly brush scallops with olive oil, then sprinkle with dash of fresh ground black pepper. Please under pre-heated broiler until seared, remove and turn over, sear. Approx. 8 minutes.

Chop shallots and place in small glass bowl. Add 1T. Champagne Vinegar, 1/2C. freshly squeezed orange (blood or valencia work best). Let sit for 30 minutes.

Whisk 1t. Extra Virgin Olive Oil into the shallot/vinegar/juice mixture.

In bowl, add mache or other greens. Then sprinke 2T. of the dressing mixture over the greens and toss well. Reserve 1T. of the dressing. You may add additional dressing to the greens if necessary.

Plate the greens, top with walnuts, then seared scallops.
Drizzle 1T. of the dressing over the scallops.

Place slices of tangerine to garnish plate.
