    amaranth, butter, black pepper, salt, poultry seasoning, onions, celery, parsley, water


In large saucepan, heat butter and oil. Add minced onion, celery, poultry seasoning and black pepper. Sauté until onion is tender and golden. Add water and parsley flakes. Heat to a fast boil and remove from heat. Add puffed amaranth and cover for 3 minutes. Fluff with fork. Makes 12 servings.
