    Arrowhead Mills Organic Pastry Flour, 1.5 cup
    Bob's Red Mill Quick cooking Rolled Oats, 0.5 cup
    Brown Sugar, 0.5 cup, unpacked
    Domino Organic Sugar 0.5 cup (24 tsp)
    2 Eggs
    Walnuts, 0.5 cup, chopped
    Cinnamon, ground, 2 tsp
    Applesauce, unsweetened, 0.5 cup
    Coconut Oil, 0.5 cup
    Salt, 0.5 tsp
    Baking Powder, 1 tsp
    Baking Soda, 1 tsp
    Carrots, raw, 1.5 cup, grated
    Raisins, 1 cup
    Pineapple, dried,chopped, 0.5 cup


Combine oil,applesauce,sugar,flour,oatmeal,baking soda, baking powder,cinnamon, salt and eggs in a large bowl. Gently stir in carrots, raisins, pineapples and walnuts.
Pour into a greased and floured (cooking spray can be used) 9x5x3 inch loaf pan (this makes 2 pans). Bake in a 350 degree oven for 50-60 minutes.
Remove from oven and let cool for 5 minutes before removing from pan. Remove from pan and allow to cool on wire rack. Makes 18-20 slices.
