    Cooking spray
    1 medium fresh peach, peeled and cubed
    1 tbsp water
    1 tsp Splenda for Baking
    1/2 tsp low fat butter spread
    1 dash ground nutmeg
    3/4 tsp cornstarch
    1 tbsp oatmeal (quick-cooking) (uncooked)
    1 fructose-sweetened butter cookie, crushed


Spray a 4-1/2" microwave-safe bowl with cooking spray.
Add peaches, water, Splenda, butter and nutmeg.
Microwave on high for 2 minutes.
Stir in cornstarch and cook for 1 minute.
Combine the crushed cookie and oatmeal, and sprinkle over the peach mixture.
Microwave 1 more min. Cool.

  • SO good! I love the fact that it's for one serving and done so quickly in the microwave. It's just two of us and my hubby doesn't like peaches so this is perfect for me. I might try this with a jar of Polar peaches when fresh aren't in season. Thank you! - 6/13/12
