Number of Servings: 5


    1 cup uncooked couscous or rice
    1 Tbsp olive oil
    1/4 cup coarsley chopped almonds
    3 cloves garlic finely minced
    8 chicken thighs (no skin)
    1 cup salsa
    1/4 cup water
    2 Tbsp orange Marmalade (or 2 Tbsp raisins)
    1 Tbsp honey
    3/4 teaspoon ground cumin
    1/2 teaspoon ground cinnamon


Cook couscous or rice per package directions and keep warm. Meanwhile, in a 10 inch skillet heat oil over medium high heat until hot. Cook the almonds in oil for 1-2 minutes and remove from skillet and set aside. Add garlic to skillet and stir 30 seconds. Add chicken; cook 4-5 minutes or until browned turning once. In medium bowl mix the remaining ingedients. Add to Chicken and mix well. Reduce heat to medium; cook anc cover about 20 minutes stirring occassionally, until chicken is fork tender and juices run clear. Stir in almonds. Serve chicken with couscous or rice
