Ingredients

    3 mild garlic cloves (remove any green part)
    1/4 cup pignoli (pine nuts) preferably Italian, not Chinese
    1/2 teaspoon sea salt
    2 cups basil leaves (chose small tender leaves), packed
    1/4 cup Ligurian olive oil (find in your gourmet store)

Directions

Either using a mortar and pestle or a food processor, combine all ingredients to a smooth paste. Toss with hot, cooked pasta, adding a little hot pasta water to thin pesto slightly and coat the pasta. Buon apppetito!
