    1 cup self raising flour (I use half white half wholemeal)
    1/2 cup splenda
    1/2 cup Anchor Xtra milk
    1/4 cup raisins/sultanas (packed) (optional, not included in nutrition info)
    1 tablespoon cocoa powder

    2 tablespoons blackstrap molasses (can use honey, maple or golden syrup)
    2 cups boiling water


Combine flour, cocoa, raisins If using) and milk in a large microwave bowl.

Separately, combine molasses and boiling water. Pour over the flour mixture.

Microwave 8-10 minutes on high.

Cooks better if you use a bundt tin of some type. You could also just put a drinking glass in the middle of the microwave bowl, and pour the mixed flour mixture in around it.

Divide finished pudding into 4 serves, eat hot.
