    2 small eggs or one jumbo
    1/2 cup egg whites
    6 cups mixed greens; chard, collards, kale chopped, stems reserved
    one spring onion chopped, reserve last 9" of greens for something else
    1 cup mushrooms
    1 cup roasted tomatoes
    pinch of oregano, thyme and rosemary
    2 oz crumbled feta
    dash salt and pepper


Saute spring onion, mushrooms and chard stems in a little olive oil spray. Add chopped greens, herbs and tomatoes reduce to low heat, cover and simmer until chard is tender.

Preheat broiler

In an iron safe skillet, cast iron is usually best, heat a little olive oil spray. Beat eggs with eggwhites. When pan is hot pour eggs into pan. Immediately spoon all the cooked greens, etc on top of the eggs and crumble the feta over the top.
Cook for about a minute or so, then place in broiler and broil until top and middle are cooked through.
