Ingredients

1 cup flour
2 servings vanilla protein powder (I used Whey)
1 tsp cinnamon
1 tsp baking soda
1 tsp salt
1 large egg
3/4 cup brown sugar
1/2 cup unsweetened applesauce*
2 medium-large apples, cored and chopped (I left skins on)
*I made my own applesauce. Simply peel and core a small apple, dice it, and put it in a small sauce pan. Add enough water to nearly cover the apples. Bring to a boil and turn heat down so it's a "small" boil. Once apple pieces are soft, mash them with a potato masher. Keep the sauce on the heat if it appears too runny and remove when you've reached desired consistency.
Directions
Preheat oven to 350 degrees.
Sift together top 5 ingredients into medium bowl and set aside.
In mixer, beat egg, brown sugar and applesauce. Slowly add dry ingredients sifted together above.
Fold in chopped apples.
Pour into sprayed bread loaf pan. Bake for 45-50 minutes or until a toothpick comes out clean.
Makes 6 generous servings and can serve as a full meal with the right amount of carbs and proteins to start your day.
