Ingredients

    16 oz fat free cottage cheese
    1 large egg
    3 scallions, thinly sliced
    3 oz Canadian bacon, diced
    1/4 cup plus 2 tablespoons grated Parmesan cheese
    1/4 teaspoon nutmeg
    1/2 teaspoon black pepper
    Pam cooking spray
    6b (14 x 9 inch) sheets of thawed phyllo dough

Directions

Preheat oven to 375. Puree cottage cheese and egg in a food processor until very smooth. transfer to a bowl; stire in scallions, bacon, 1/4 cup Parmesan cheese, nutmeg, and black pepper. If using spinach, add now. If using jalepenos, omit nutmeg and add now.

Spray a 9 inch pie pan with Pam. Add 2 phyllo sheets. Don't worry about overhang as you layer phyllo sheets. Spray with Pam. Add 2 more phyllo sheets crosswise, spray with Pam. Add last 2 phyllo sheets crosswise, spray with Pam. Add mixture. Fold up sides of phyllo, leaving a hole in the center. Sprinkle with remaining 2 tablespoons of Parmesan cheese.

Place pie on a cookie sheet, bake at 375 for 60 minutes. Remove from oven and let set for 15 minutes.
