    * Onions, raw, 1 medium
    * Garlic, 2 cloves
    * *Peppers, red, fresh, 1 large
    * Carrots, raw, 3 medium
    * Mushrooms, fresh, 1 cup pieces
    * Kale, 6 cup, chopped
    * Del Monte Petite Cut Diced Tomatoes, 2 cup
    * Chicken Thigh, 4 thigh, bone and skin removed
    * Pork Sausage, 2 link
    * Low Sodium Chicken broth
    * Olive oil


Dice all the vegetables.

In a dutch oven, place 2 TBSP olive oil, cook onions, peppers, and garlic until soft. Add the diced tomatoes. Once cooked, pour into a blender and puree until smooth. Set aside.

Place the chicken and sausage in the pot. sear on all sides, then remove from pan.

In 2 TBSP olive oil, place carrots, mushrooms, and kale into the pan. Cook until the kale reduces to less than 1/2 height of pan. Pour tomato-pepper mixture into pan with 4 cups of chicken broth. Bring to a boil. Reduce heat and simmer for 45 minutes or until meat is fully cooked.
