    1/2 large onion, finely chopped
    2 cloves garlic, finely chopped
    2 stalks celery, finely chopped
    1/2 orange or yellow sweet pepper, finely chopped
    1 carrot, thinly sliced
    1 cup zucchini, cubed
    1 TBSP olive oil
    5-6 large potatoes, with skin, chopped
    1 large can Fat Free Chicken Broth
    1/2 cup skim milk
    1 cup frozen corn
    Salt and pepper to taste


Place all vegetables (except corn) in large stock pot along with oil. Saute for 6-7 minutes. Add broth and cook over med. heat until all vegetables are tender. Add milk and corn. Heat for additional 5 minutes.

I vary the recipe with whatever vegetables I have on hand. No zucchini, carrots, or celery...that's ok. It still tastes great!
