Yummy soup for a cold day, although a bit high in sodium.

Number of Servings: 6

Ingredients

    1 cup dry lentils
    1 cup chopped celery
    1/4 cup chopped onion
    1 cup chopped bell peppers
    2 cloves garlic
    1/2 tsp dried basil
    1/2 tsp dried oregano
    1/4 tsp dried thyme
    1 Tbsp dried Italian Seasoning
    1 bay leaf
    2 14 1/2oz cans vegetable or chicken broth
    1 1/2 cups water
    1 14 1/2oz can no added salt diced tomatoes (undrained)

    OPTIONAL:
    1/4 cup snipped fresh parsley
    2 tablespoons cider vinegar

Directions

Rinse lentils. Add all ingreedients (except optional ingreedients) to crockpot and stir.

Cover; cook on low heat setting for 12 hours or high heat setting for 5-6 hours. Discard bay leaf. Stir in parsley and vinegar if desired.
