Number of Servings: 6


    3 potatoes, diced
    2 c. chopped leeks
    1 large carrot
    1 celery stock
    4 c. water
    1 cup mil
    salt and pepper to taste.


Dice potato, celery, leek and carrot. Cover with the water. Cook until potato is soft, generally 20 minutes. In batches, put in blender. Return to pot, add one cup of milk and season with salt and pepper. Makes 6 servings.
