    Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb (remove)
    *Peppers, sweet, red, fresh, .5 medium (approx 2-3/4" long, 2-1/2" (remove)
    Green Peppers (bell peppers), 0.5 cup, chopped (remove)
    Mushrooms, fresh, 1 cup, pieces or slices (remove)
    Onions, raw, .5 cup, chopped (remove)
    diced tomatoes with green chiles, 14.5 oz (remove)
    Spinach, fresh, 5 cup (remove)
    *Campbell's low sodium chicken broth, .5 cup (remove)
    *Land O Lakes Fat Free Ultra-Pasteurized Half & Half, 4 tbsp (remove)
    *Breakstone's Fat Free Cottage Cheese, 1.5 cup (remove)
    *Hearthland 100% Whole Wheat Angel Hair Pasta, 3 oz (remove)
    *Kraft Finely Shredded Low-Moisture Part Skim Mozzerella cheese, .25 cup (remove)
    *Extra Virgin Olive Oil, 1 tbsp (remove)

preheat oven to 385
Slice eggplant long ways and grill.
Sautee onion and garlic till soft, then add peppers and mushrooms to pan.
Sautee till soft, then add mushrooms and chicken broth
let the chicken broth reduce for a couple minutes and add tomatoes and half and half.
Let reduce for a few minutes and add spinach till wilted.
Add cottage cheese and mix...take off heat
layer in an oven safe dish a layer of eggplant, then a layer of filling and so on until you are out of eggplant. Put the rest of the filling/sauce on top
Bake, uncovered for 20 minutes.
while eggplant is cooking boil pasta
when there is 5 minutes left on the pasta, open the oven and put mozz cheese on the eggplant. Let melt while the pasta is cooking.
Serve over cooked pasta, makes 3 servings.
