    1 c. Romain Lettuce,shred or tear (rinsed and dried)
    1 Tbsp Sauteed Red Onion (thinly sliced)
    1 Mushroom Button, rinsed and diced
    Fresh Cracked Black Pepper and Kosher Salt to taste
    1/2 Tbsp Parmesan Cheese
    1 1/2 Tbsp Extra Virgin Olive Oil


Thinly slice enough red onion to make a tablespoon. Dice up one button mushroom and saute with onions in a 1/2 tbsp of Extra Virgin Olive Oil. Salt and Pepper to taste, this will also help the onions to sweat and bring out their true flavor. Saute for three minutes or until onions take on a transparency. Remove from heat.
Tear or shred Romain Lettuce into manageable bite size pieces. Top with Onion and Mushroom mixture, lightly drizzle remaining tablespoon of olive oil over salad, and top off with a sprinkle of Parmesan cheese.
