Ingredients

    Beans, red kidney, 2.5 cup drained
    Yellow Sweet Corn, Canned, 3 cup drained
    Salsa, 3 cup
    Black Olives, 12 jumbo or 1- 6 oz can sliced
    *Old El Paso Taco Seasoning Mix (40% Less Sodium), 6 tsp or 1 packet
    *Quaker Corn Meal, 24 tbsp or 1 1/2 cups
    Ground beef, lean, 32 oz
    Water, tap, 1.5 cup
    *Cheese- Kraft Fat Free Shredded Cheddar Cheese, 1 cup (remove)

Directions

Using hot water, add taco seasoning and corn meal and let "bloom" . Combine all ingredients except the cheese together and add corn meal mixture and mix well. Pour into a glass pan , cover with foil and bake at 350 for 40-50 minutes then add cheese on top and bake until cheese is melted. Serve with Fat free sour cream and extra salsa if desired.

You can also cook this in a crock pot on low temperature for 4-5 hours add cheese last 1/2 hour.
