Introduction

Awesome whole grain waffles! The blueberries make them sweet and the pecans give them a surprising crunch! Using applesauce instead of the usual vegetable oil keeps them moist with half the fat. Ingredients

    Whole Wheat Flour, 1.75 cup
    Milk, 1%, 1.5 cup
    Baking Powder, 2 tsp
    Granulated Sugar, 3 tsp
    All White 100% Liquid Egg Whites, .5 cup
    Salt .5 tsp
    Pecans, 1 cup, chopped
    Blueberries, frozen (unsweetened), 2 cup, unthawed
    Applesauce, unsweetened .5 cup

Directions

Mix dry ingredients together and set aside. In another bowl, mix milk and applesauce, set aside. In third bowl, beat egg whites until stiff. Add applesauce/milk mixture to dry ingredients and stir well. Gently fold first the egg whites then the blueberries and pecans into the mixture. Makes 7-8 large (8 inch) waffles.
