Ingredients

    1/2 cup onion, finely chopped
    3 cloves garlic, finely chopped
    1 can (15.5 oz) black beans
    1 can (15.5 oz) red kidney beans
    1 can (28 oz) canned diced tomatoes
    6 tbsp fresh chunky salsa
    2/3 packet taco seasoning mix (I use Old El Paso 40% reduced sodium
    2/3 packet Hidden Valley Ranch Mix
    1 cup cooked chicken breast (boneless, skinless)

Directions

Heat oil in a heavy bottomed pot. Add onion and garlic, stirring often. Add a little water to keep from sticking, if necessary. Add beans, diced tomatoes, seasoning mixes, and salsa. Bring to a simmer. Add in chicken and continue cooking untl chicken is warmed through. Makes 7 1-cup servings.
