Ingredients

    Jennie O - Turkey Breakfast Sausage, 16 oz
    Corn Tortillas, 5 tortillas, medium (approx 6" dia)
    Cheddar or Colby Cheese, Low Fat, 1 cup, shredded
    Green Chili Peppers, canned 1/4 cup
    Egg substitute, liquid (Egg Beaters), 1 cup
    Egg, fresh, 3 large - beaten
    Cottage Cheese, 1% Milkfat 1/2 cup
    Fat free half and half 1/2 cup
    Chili powder 1/2 tsp
    Cilantro - minced 2 tbsp

Directions

In a skillet, cook the sausage until no longer pink; drain. Place tortillas in a greased 9-in. pie plate, overlapping and extending 1/2 in. beyond rim. Layer with sausage, cheese and chilies. Combine eggs, 1/2 & 1/2, cottage cheese and chili powder; slowly pour over chilies. Bake at 350 degrees F for 45 minutes or until the center is set and puffed. Sprinkle with cilantro. Cut into wedges.
