Banana, fresh, 2 medium (7" to 7-7/8" long) (remove)
*Pineapple, canned, .33 cup, crushed, sliced, or chunks (remove)
Carrots, raw, 2 medium (remove)
Brown Sugar, 1 cup, packed (remove)
*Flour, white, 1 cup (remove)
*Whole Wheat Flour, 1 cup (remove)
Molasses, 1 tbsp (remove)
Baking Powder, 2 tsp (remove)
Baking Soda, 1 tsp (remove)
Salt, 1 tsp (remove)
Vanilla Extract, 1 tsp (remove)
Pecans, .5 cup, chopped (remove)
Coconut, raw, .33 cup, shredded (remove)
Cinnamon, ground, 1 tsp (remove)
Orange Peel, 1 tbsp (remove)
Raisins, .5 cup, packed (remove)
Directions
Servings: 24
Preheat oven to 350 degrees. grease 2 loaf pans. Mix bananas, pineapple, carrots, egg, sugar, vanilla and molasses together in a bowl until smooth and well blended. Mix all the dry ingredients but the nuts together. Add the fruit mixture slowly and fold in coconut,,pecans and rasins in. Beat about one minute. Pour slowly into the loaf pans (each should be about 1/2 full). Bake for about 40-45 minutes or until done. Cool, and ice with a cream cheese frosting if desired.
My mom left out the 1/2 cup of butter and recipe turned out great without the butter.
