Introduction

With a good kick, this rice dish is good as a side, or a main course. With a good kick, this rice dish is good as a side, or a main course.

Ingredients

    1 cup dry Minute Brown Rice
    1 cup Skim milk
    2 oz. Extra Sharp Cheddar cheese
    1.5 cup Broccoli/cauliflower mix (1:1)
    0.5 oz Jarred Jalapenos, drained

Directions

In a small sauce pan, begin heating milk over low heat.
Grate cheese and add to milk. Turn to medium-low heat.
While cheese is beginning to melt, add rice. Turn heat to medium and cover.
Finely chop broccoli/cauliflower mix and jalapenos. Add to rice.
Cook for 20 minutes on medium heat, stirring frequently.
