Ingredients

    Bean Filling
    1 30 oz can black beans
    1 cup onions chopped
    .5 tbsp butter
    .5 jalapeno chopped
    .5 serrano chopped
    2 chipotle peppers in adobo sauce chopped
    1 handful cilantro
    2 cloves garlic

    8 flour tortillas
    4 oz cheddar cheese
    .25 cup onion diced
    .5 large tomato chopped
    1 handful cilantro for inside the burrito

Directions

Makes 8 burritos- These are VERY spicy beans you might not want all the peppers, I like my food spicy!

Cook onions in butter until translucent salt lightly
add garlic, jalapeno, and serrano and cook 3 min
add chipotle peppers
Add black beans and cook 5 min
Pour mixture into food processor and pulse until desired consistency. I like some beans to be left whole but you could pulse to refried bean consistency

Add about .25 cup of beans to each tortilla and .5 oz of cheese. I like to microwave the tortilla beans and cheese for about 30 sec to get everything melty and the tortilla soft you could also heat the tortilla only if you prefer non-melted cheese

Top with diced onions and tomatoes, roll up and enjoy
