    1 cup unsalted raw pistachios
    2 cups (packed) fresh cilantro leaves
    2 tablespoons fresh lemon juice, divided
    1 garlic clove, chopped
    1 teaspoon ground cardamom
    .75 teaspoon salt
    .25 cup olive oil
    3 second oil spray
    4 large chicken breasts, halved, skinless, boneless


Makes 8 servings
Toast pistachios on baking sheet until golden, about 7 minutes. Transfer to processor. Add cilantro leaves, 2 tablespoon lemon juice, and next 3 ingredients to processor. Using on/off turns, process until coarse paste forms. With machine running, gradually olive oil. Season pesto with pepper.
Spray microwavable baking pan that is just large enough for the breasts with oil spray. Lay chicken in baking pan.
Spread pesto over chicken making sure all visible surfaces are covered.
Cover and microwave on high for 3 minutes and at 50% for 10 minutes. Times are approximate for 1100 W oven.
