Introduction
No groceries, onions, and a can of evaporated milk leftover from Christmas baking? Sounds like Onion Soup to me! This is super-easy and requires few ingredients since a) it is in a crockpot and b) I had no food in the house. 200 calories a serving, which is a little high but this is super-rich soup. :) No groceries, onions, and a can of evaporated milk leftover from Christmas baking? Ingredients

3 medium onions
3T Canola Oil
1 medium carrot
1 can evaporated milk
2T Better than Bouillon (mixed with 4 cups of water)
2t black pepper
4 oz. Colby Jack Cheese, shredded.
.25 c cornstarch (mixed with 2 cups of water)
Directions
Chop onions and carrot, add to slow-cooker with oil. Cook on low for 7 to 8 hours. Heat four cups of water, add bouillon. Add bouillon water, cornstarch water, and evaporated milk to crockpot, cook on high for 30 minutes. Add pepper and cheese, stir and serve.
Makes 8 1-cup servings.
