    juice of one lime
    1/2 teaspoon grated lime rind
    1/2 teaspoon liquid aminos
    1/2 tablespoon chopped fresh cilantro
    1/8 teaspoon ground cumin
    3.5 oz roughly shredded chicken
    1/2 tsp poblano hot sauce
    1.5 oz red onions, sliced
    1.5 oz diced tomato
    1/2 garlic clove, minced
    1/8 teaspoon kosher salt
    Coarsely ground black pepper
    1/2 oz of Romaine lettuce leafs


Whisk together lime juice and rind, liquid aminos, poblano, cilantro, and cumin in a large bowl. Add shredded chicken; toss.
In a large skillet sauté onions and tomato until browned. Add garlic, salt and pepper.
Spoon chicken mixture down center of each lettuce leaf and fold to wrap.
Secure with toothpick if needed.
