Introduction

Serve hot over pasta with veggie burger or soy hot dogs. Serve hot over pasta with veggie burger or soy hot dogs.
Number of Servings: 6

Ingredients

    1.5 TBS. olive oil
    4 large onions, sliced, separated
    5 small carrots, sliced on diagonal
    1 large head cabbage, quartered, then sliced
    2 four ounce cans mushrooms
    3 TBS. Hungarian paprika
    .5 tsp. salt
    .5 tsp. cayenne pepper
    1/3 cup red wine
    1 cup low fat sour cream



Directions

Makes 6 servings.

Heat oil in large skillet. Add onions, cover, and cook about 10 minutes, stirring occasionally.
Add carrots, cabbage, and mushrooms. Mix well, cook about 15 minutes, stirring occasionally.
Stir in paprika,salt, pepper and red wine.
Cover and cook 25 minutes, stirring occasionally, until cabbage tender.
Stir in the sour cream, mix well.
Cover and cook about 5 minutes.

Serve as side dish over pasta with meatless 'sausage', hot dogs, or falafel balls.
