    1/2 cup dried brown lentils
    1 cup sliced leeks
    1/2 cup green and/or red pepper
    1/2 cup fresh mushrooms
    1 garlic clove, minced
    5 cups low sodium, low fat chicken broth
    1/2 teaspoon dried basil
    1/4 teaspoon dried oregano
    1/4 teaspoon dried rosemary
    1/4 teaspoon dried tarragon (optional)
    1/4 teaspoon black pepper (optional)
    1 1/2 cups cooked chicken (can use turkey) (about 1/2 lb)
    1 cups sliced carrots
    1/2 cup celery
    1/2 cup quick cooking barley
    1 can (16 ounces) no salt added diced tomatoes
    Spray olive or vegetable oil


1. Rinse and drain lentils, set aside
2. In large sauce pan cook leeks, mushrooms, peppers and garlic in spray oil until tender.
3. Stir in chicken broth, basil, oregano, rosemary, tarragon, black pepper and lentils. Bring to a boil; reduce heat, cover and simmer for 20 minutes.
4. Stir in chicken, carrots, tomatoes and barley. Simmer, covered about 20 minutes.

  • This was delicious! We had a snowy day today and I have a miserable cold, so it waperfect day to slow cook this. I actually doubled the recipe. My family LOVED it. Some for lunches too. I never made a chicken soup with garlic or red peppers. WOW~ The flavors were wonderful. Recommend it! - 2/27/10
